Sticks, tablespoons and cups
US butter is sold in sticks, and the stick is the baker's best friend: 1 stick = 1/2 cup = 8 tablespoons. King Arthur Baking lists that half cup at 113 g. Every figure in this table is calculated from that one chart value, so the whole table hangs together:
| Measure | Equivalent | Grams |
|---|---|---|
| 1 tablespoon | 1/16 cup · 1/8 stick | ≈14 g |
| 1/4 cup | 4 tbsp · 1/2 stick | ≈57 g |
| 1/3 cup | 5 tbsp + 1 tsp | ≈75 g |
| 1/2 cup | 8 tbsp · 1 stick | 113 g |
| 2/3 cup | 10 tbsp + 2 tsp | ≈151 g |
| 3/4 cup | 12 tbsp · 1 1/2 sticks | ≈170 g |
| 1 cup | 16 tbsp · 2 sticks | 226 g |
| 2 cups | 4 sticks | 452 g |
Calculated from King Arthur Baking's listed value of 113 g per 1/2 cup of butter (Ingredient Weight Chart). Tablespoon and part-cup gram values are rounded to the nearest gram.
Blocks, sticks and European recipes
Outside the US, butter usually comes in blocks rather than sticks — a 250 g block is the common European size. At the chart weight, 250 g of butter is about 1.1 cups, or roughly 2.2 US sticks. If a European recipe gives butter in grams and your kitchen works in sticks, divide the grams by 113 to get sticks; if a US recipe gives sticks and you have a block and a scale, multiply sticks by 113 g and cut by weight. Either way the scale removes all doubt, because butter's weight doesn't change when it softens — only its volume does.
Frequently asked questions
How many grams is a stick of butter?
113 grams. A US stick of butter is 1/2 cup (8 tablespoons), and the King Arthur Baking chart lists 1/2 cup of butter as 113 g — so a full cup is two sticks, 226 g.
How many sticks of butter is 250 grams?
About 2.2 sticks (250 ÷ 113). A European 250 g butter block is a little more than two US sticks, or just over 1 cup (about 1.1 cups) of butter.
Does salted butter weigh more than unsalted?
Not in any way that matters for conversion. The King Arthur chart gives a single weight for butter — 113 g per 1/2 cup — without distinguishing salted from unsalted, so use the same numbers for both.
How many tablespoons of butter is 100 grams?
About 7 tablespoons. One tablespoon of butter is 1/16 of a cup, which works out to about 14 g from the chart's 226 g per cup, and 100 ÷ 14 is just over 7.
Should I measure butter melted or solid?
The chart weight (226 g per cup) is for solid butter, measured the way sticks are marked. If a recipe wants melted butter by the cup, melt it first and then measure the volume — or simplest of all, weigh out the grams, since the weight is the same either way.
